5 easy meals to get you through a busy week

We all know that eating properly isn’t easy when you are busy with lectures, assignments and, of course, socialising. Humanity Hallows has come up with five easy, quick and nutritious meals to see you through the week.

Beans on toast

Beans. On. Toast. If you’re a student and not eating beans on toast, are you even a student? And don’t worry, if you think it’s bland and boring, there’s plenty of ways to spice it up. Enjoy spicy food? Add some chilli and pepper to the beans. How about beans on French toast? (Dip the bread in egg and fry it.) Or, add a load of cheese and a fried egg – mouth watering!

Chilli

Easy. Fry up and brown off some mincemeat or Quorn mince. Then, you can either cheat and add a jar of ready made chilli sauce or you can pretend you’re good at cooking and simply add a tin of chopped tomatoes, any variety of beans and add spices yourself. Chilli flakes, surprisingly, are essential. Experiment! First time you may mess it up. But after a few tries, you just might become a chilli master.

Stir fry

It’s impossible to mess up stir fry. Simply fry off some chicken or other meat and, once cooked, add veg. (This dish also works just as well without meat). Use veg you might not normally eat like beansprouts, cabbage, mange tout, mushrooms, spring onions etcetera. Then, have some noodles on the boil and once they’re ready, throw them in too. Finally, either spice it up yourself or add a packet of whatever sauce takes your fancy.

Curry

Another easy to make dish that can either include as much meat as you like or can be as vegan as Ellen DeGeneres. Fry up some diced onion and garlic, add the meat and or veg (sweet potato has become quite popular), and then spice it up. Have it a mild or as fiery as you like. Similarly to the last dishes, either add a jar of ready made sauce (ALDI do some great curry sauces) or a tin of chopped tomatoes and add spices yourself. Cumin, turmeric, chilli, coriander and curry powder should all be on your list. Best of all, like the stir fry and chilli, you can refrigerate this in a Tupperware box (BUY TUPPERWARE) and warm it up for another day.

Avocado on toast

What is an avocado? All we know is, it’s good on toast. And healthy. Add as much as you like to this. Instead of toast, put it on garlic bread. Add some salad and salt and pepper. Maybe some halloumi or feta cheese. This dish is good, tasty and, above all, it’s super easy.
